Cantonese cuisine is based on the freshest ingredients cooked quickly over the high heat of a wok -- which is one of the reasons world travelers are encouraged to eat Cantonese food in their travels. It tends to be fresher and safer than many other cuisines.
     All the seafood for sale is live and the water is not only aerated by pumps but changed frequently.
